Honey Baked Bananas:
We share this quick and easy recipe that can give a new lease on life. It’s packed with spices, sugar, and delicious fruits. Each bit will add the much-needed energy early in the morning. It has a dose of creamy and smooth yogurt, crunchy nuts, and sweet bananas.
It’s also extremely simple to make and quick too since it takes only 20 minutes to prepare it.
Ingredients:
- 2 ripe bananas
- 2 tablespoon brown sugar
- 1 tablespoon cinnamon
- 4 tablespoon honey
- 200 g Greek yogurt
- 4 chopped walnuts
Method:
- Pre-heat oven to 190⁰C.
- Slice the bananas and place them on a baking tray lined with aluminum foil.
- Pour a tablespoon of honey with a bit of cinnamon and sugar over the bananas.
- Bake it for 10-15 minutes till the bananas become soft and sticky.
- Serve them hot with Greek yogurt with honey drizzled on it and a tablespoon of walnuts sprinkled over it.
Tip for preparation:
You can add soft fruits like peaches too.

Buns with honey:
These are buns made not only for breakfast. Honey imparts a mild sweetness to them.
Ingredients for the dough:
- 2 tablespoons active dry yeast
- 1 cup milk – room temperature
- 1/3rd cup warm water
- 8 ounces of unsalted butter
- 3 large eggs
- 1/3 cup honey
- 1 tablespoon pure vanilla extract
- 2 teaspoon coarse salt
- Vegetable oil
- 5 to 6 cups of all-purpose flour
- For filling and topping
- ½ cup corn syrup
- 4 ounces unsalted butter
- ½ cup honey (more for drizzling and brushing)
- ½ cup mascarpone cheese.
- 2 tablespoons sugar
- ½ cup chopped pecans
- ½ cup crème Fraiche
Recipe:
- Make the dough: put some yeast over warm water in a bowl. Wait for 5 minutes until it gets foamy.
- Whisk honey, milk, eggs, salt, and vanilla in the mixer. Add yeast mixture and whisk again for a minute.
- Switch to the dough hook, reduce the speed to low. Now add 4 cups of flour and then raise the speed to medium. Keep kneading.
- Add flour and ½ cup at a time. Mix until the dough doesn’t stick to the bowl. Raise the speed to high and knead for 10 minutes.
- Or else you can just knead it with your hands for 15 to 20 minutes.
- Knead the dough for 5 minutes till it gets smooth. Now transfer the dough to an oiled bowl and cover with plastic. Set it aside in a warm, draft-free spot till it becomes fluffy or double its size for about an hour.
- Make the filling and topping- melt butter in the saucepan over medium heat. Add and stir honey, corn syrup, and sugar. Put it on the gentle sim and then remove it from the heat. Let it cool for a while- then combine mascarpone and crème Fraiche in the bowl.
- Divide the dough into 3 portions. Roll each of them into a ball. Freeze 2 of them for up to 3 months -thaw it in the fridge before you use it.
- Roll the remaining dough into 10 rectangles of ½ inch. Brush honey spread mascarpone mixture on top of them. Leave 1-inch border and sprinkle pecans.
- Roll the dough into a log and pinch along the seal to seal. Cut into 1 and a ½ inch thick slices.
- Pour honey mixture into an 8-inch square baking pan. Now put the buns, cut sides down in a pan, 3 to a row.

Let buns rise as they warm and draft-free spot till they rise to double the size for 30 to 40 minutes.
- Now preheat the oven to 375 degrees. Let the oven rack be in the lower third. Bake the buns and while it’s halfway through rotating them. Keep it till they become brown and bubbling for an hour.
- If the buns become too dark cover them with a foil. Set the wire rack on a baking sheet. Now invert the buns onto the rack. Pour a bit of honey and serve them warm.

Honey flapjacks:
Honey flapjacks are filled with vitamins and minerals like calcium and irons since it has oats and natural antioxidants from honey.
Ingredients:
- 220 grams rolled oats
- 250 grams honey
- 30 grams desiccated coconut
- A pinch of salt
- 150 grams butter
And if you wish you can use half coconut oil and butter.
Recipe:
- Preheat the oven till 180Celcius.
- Line the baking tray with silicone or non-stick greaseproof paper.
- Put butter and honey into the saucepan and heat till the butter melts and it all comes together.
- Now add desiccated coconut, oats, and a pinch of salt.
- Pour into the tray and cook for 20 to 25 minutes until it becomes brown.
- Don’t overcook as it will become dry and crumbly. If you want it to be a bit gooey then undercook it. Ensure that it’s totally cool before cutting.
